Cinco de Mayo is tomorrow and you should totally whip up some cactus cookies to impress your squad, your mom, yourself… pretty much anyone will be impressed by these little guys given how cute they are.
These were super easy to make – they’re your basic butter cookie recipe, with green icing & sprinkles. The key is to buy a cactus shaped cookie cutter.
For the cookies:
1/2 cup butter or margarine, softened
3/4 cup white sugar
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
a cookie sheet
cooking spray for the cookie sheet
For the icing:
1 1/2 cups icing sugar
25g butter, softened
1 tablespoon milk
Few drops of green food coloring – add one drop at a time to get the green you want
Now to make these delish cookies…
Mix the butter & sugar together in a bowl. Add the vanilla extract & egg to the bowl, and mix again.
In a different bowl, stir the flour, baking powder and salt together.
Add the flour mixture to the butter mixture and mix it all until its smooth.
Pat the dough into a ball and wrap it in plastic. Put it in the freezer for 15 minutes. Preheat the oven to 350 F while you do the next steps.
Roll out the dough. Cut out the dough with the cactus cookie cutter. Place them on your cookie sheet.
The last step – Bake the cookies for 12-15 minutes. Let them cool down before you dress those little guys up with icing.
For the icing:
Combine the icing sugar, butter and milk in a bowl until smooth. Then, add enough food coloring to tint the icing to the green colour you want. Now dress the cookies, and place them in the fridge so that the icing & sprinkles hardens.
